Ingredients

- 1 cup almond flour
- 1 cup grated carrots
- 1/2 cup coconut sugar
- 1/4 cup unsweetened applesauce
- 1/4 cup plant-based milk
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, coconut sugar, baking powder, cinnamon, nutmeg, and salt.
- Add grated carrots, applesauce, and plant-based milk. Stir until combined.
- Fold in walnuts if using.
- Pour the batter into a donut pan.
- Bake for 20-25 minutes until golden brown.
- Let cool before removing from the pan.
Notes
- Store leftovers in an airtight container.
- These donuts can be topped with vegan frosting or a dusting of powdered sugar.
