- 2 cups grated carrots
- 1 cup crushed pineapple, drained
- 1 cup cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 cups crushed graham crackers
- 1 cup chopped nuts (walnuts or pecans)
- 1 cup white chocolate, melted
Instructions
- In a bowl, mix grated carrots and crushed pineapple.
- Add cream cheese, powdered sugar, vanilla extract, and cinnamon. Mix until smooth.
- Fold in crushed graham crackers and chopped nuts.
- Form the mixture into balls and place on a baking sheet.
- Chill in the refrigerator for 30 minutes.
- Dip each ball in melted white chocolate.
- Place back on the sheet and let chocolate set.
Notes
- Store in the fridge for up to a week.
- Use gluten-free graham crackers for a gluten-free version.
