Description

Carrot cake balls are a delicious and easy-to-make dessert. They combine the flavors of carrot cake into bite-sized treats.


Ingredients

  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups crushed graham crackers
  • 1 cup chopped nuts (walnuts or pecans)
  • 1 cup white chocolate, melted

Instructions

  1. In a bowl, mix grated carrots and crushed pineapple.
  2. Add cream cheese, powdered sugar, vanilla extract, and cinnamon. Mix until smooth.
  3. Fold in crushed graham crackers and chopped nuts.
  4. Form the mixture into balls and place on a baking sheet.
  5. Chill in the refrigerator for 30 minutes.
  6. Dip each ball in melted white chocolate.
  7. Place back on the sheet and let chocolate set.
