Description

Delicious carrot apple zucchini muffins topped with cream cheese frosting.


Ingredients

  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1 cup grated apple
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, zucchini, and apple.
  3. In another bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  4. Combine dry ingredients with the wet ingredients: oil and eggs.
  5. Add grated fruits and mix until just combined.
  6. Fill muffin tins with batter and bake for 20-25 minutes.
  7. Let muffins cool completely.
  8. For frosting, beat cream cheese and butter until smooth.
  9. Add powdered sugar and vanilla extract, mix until creamy.
  10. Frost cooled muffins and serve.
