Ingredients

- 2 cups long-grain rice
- 1 lb chicken, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can coconut milk (400 ml)
- 2 cups chicken broth
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 lime, juiced
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté until soft.
- Add chicken pieces and cook until browned.
- Stir in rice, thyme, paprika, salt, and pepper.
- Pour in coconut milk and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let sit for 5 minutes.
- Fluff rice with a fork and add lime juice before serving.
Notes
- For extra flavor, marinate chicken in lime juice and spices overnight.
- Serve with fresh cilantro or parsley on top.
