Description

A flavorful Caribbean dish featuring chicken and rice cooked with spices and vegetables.


Ingredients

  • 2 cups long-grain rice
  • 1 lb chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can coconut milk (400 ml)
  • 2 cups chicken broth
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 lime, juiced

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Sauté until soft.
  3. Add chicken pieces and cook until browned.
  4. Stir in rice, thyme, paprika, salt, and pepper.
  5. Pour in coconut milk and chicken broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Remove from heat and let sit for 5 minutes.
  8. Fluff rice with a fork and add lime juice before serving.

Notes

  • For extra flavor, marinate chicken in lime juice and spices overnight.
  • Serve with fresh cilantro or parsley on top.
