  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) brown sugar, packed
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium saucepan, melt the unsalted butter over medium heat. Add the packed brown sugar and stir until smooth and bubbling, about 2-3 minutes. Pour the caramel into a 9-inch round cake pan.
  2. Peel and slice the bananas into 1/2-inch thick rounds. Arrange the banana slices in a circular pattern on top of the caramel in the cake pan.
  3. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, beat the granulated sugar and remaining melted butter until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  5. Pour the cake batter over the arranged bananas in the cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool in the pan for about 10 minutes, then carefully invert it onto a serving plate. Allow to cool slightly before slicing and serving.
