Ingredients

- 2 cups all-purpose flour
- 2 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1 cup chopped pecans
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Add eggs and vegetable oil; mix until smooth.
- Fold in grated carrots and chopped pecans.
- Pour batter into greased cake pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cakes cool completely.
- Layer cakes with caramel sauce between them.
- Drizzle remaining caramel sauce on top and sprinkle with pecans.
Notes
- Store in the refrigerator for longer freshness.
- Can substitute walnuts for pecans if desired.
- Serve with whipped cream for added richness.
