Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup chopped pecans
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add eggs and vegetable oil; mix until smooth.
  4. Fold in grated carrots and chopped pecans.
  5. Pour batter into greased cake pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let the cakes cool completely.
  8. Layer cakes with caramel sauce between them.
  9. Drizzle remaining caramel sauce on top and sprinkle with pecans.
