- ½ cup unsalted butter, softened

- 1 large egg yolk
- 1 tablespoon cold water
- ¼ teaspoon salt
- 16 oz (450 g) cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups diced apples (about 2 medium apples)
- 1 teaspoon ground cinnamon
- ½ cup caramel sauce (store-bought or homemade)
- Whipped cream (for serving)
Instructions
- Prepare the tart crust by combining softened butter and granulated sugar until light and fluffy. Add egg yolk and mix well. Gradually add flour and salt, mixing until dough comes together. Add cold water if needed.
- Make the cheesecake filling by beating softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla, diced apples, and cinnamon.
- Assemble the tart by pouring the cheesecake filling into the chilled tart crust, spreading evenly.
- Preheat the oven to 350°F (175°C) and bake the tart for 30-35 minutes until the filling is set and edges are golden.
- Prepare the caramel topping while the tart bakes. If using homemade, melt sugar until golden, then add cream and butter, stirring until smooth.
- Once baked, let the tart cool completely, then drizzle with caramel sauce and serve with whipped cream.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
- Chill the crust for at least 30 minutes before baking to prevent shrinking.
