Description

Caprese Pasta Salad is a delightful twist on the classic Caprese salad, combining fresh tomatoes, mozzarella, basil, and pasta with a sweet and tangy balsamic glaze.


Ingredients

  • 250 grams (8 oz) of pasta (fusilli or penne)
  • 200 grams (7 oz) of cherry tomatoes, halved
  • 200 grams (7 oz) of fresh mozzarella balls (bocconcini)
  • 1 cup of fresh basil leaves
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. Prepare the fresh ingredients: wash and halve the cherry tomatoes, drain the mozzarella, and prepare the basil.
  3. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and basil.
  4. Drizzle olive oil and balsamic glaze over the salad, and season with salt and pepper.
  5. Gently toss the ingredients together and serve immediately or refrigerate for up to an hour before serving.

Notes

  • For a heartier meal, consider adding grilled chicken or shrimp.
  • Store leftovers in an airtight container and consume within 1 to 2 days.
