Caprese Pasta Salad is a delightful twist on the classic Caprese salad, combining fresh tomatoes, mozzarella, basil, and pasta with a sweet and tangy balsamic glaze.
Ingredients

- 250 grams (8 oz) of pasta (fusilli or penne)
- 200 grams (7 oz) of cherry tomatoes, halved
- 200 grams (7 oz) of fresh mozzarella balls (bocconcini)
- 1 cup of fresh basil leaves
- 3 tablespoons of extra virgin olive oil
- 2 tablespoons of balsamic glaze
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
- Prepare the fresh ingredients: wash and halve the cherry tomatoes, drain the mozzarella, and prepare the basil.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and basil.
- Drizzle olive oil and balsamic glaze over the salad, and season with salt and pepper.
- Gently toss the ingredients together and serve immediately or refrigerate for up to an hour before serving.
Notes
- For a heartier meal, consider adding grilled chicken or shrimp.
- Store leftovers in an airtight container and consume within 1 to 2 days.
- Add fresh basil just before serving to keep it vibrant.
