A delicious and easy Caprese Breakfast Casserole made with fresh tomatoes, basil, and mozzarella.

- 6 large eggs
- 1 cup milk
- 2 cups diced tomatoes
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh basil leaves, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- Add diced tomatoes, mozzarella, basil, salt, and pepper to the egg mixture.
- Grease a baking dish with olive oil.
- Pour the mixture into the baking dish.
- Bake for 30-35 minutes or until the center is set.
- Let cool for a few minutes before serving.
