Ingredients

  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 3 cups chicken broth
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced sausage and cook until browned.
  3. Stir in onion, bell pepper, and garlic; cook until soft.
  4. Add rice and Cajun seasoning; stir well.
  5. Pour in diced tomatoes and chicken broth; bring to a boil.
