Ingredients

- 1 cup long-grain rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 3 cups chicken broth
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook until browned.
- Stir in onion, bell pepper, and garlic; cook until soft.
- Add rice and Cajun seasoning; stir well.
- Pour in diced tomatoes and chicken broth; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Season with salt and pepper to taste before serving.
