  • 240 ml (1 cup) heavy cream: For a creamy and luscious sauce.
  • 1 bell pepper: Diced; any color will work to add sweetness and crunch.
  • 1 small onion: Diced to enhance the overall flavor.
  • 2 tablespoons fresh parsley: Chopped for a fresh finish.
  • 1/2 teaspoon black pepper: Adjust to taste for seasoning.
  • 50 grams (1/2 cup) grated Parmesan cheese: For a cheesy, savory touch.
  • Salt: To taste, enhancing all the flavors.

Instructions

  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente, about 8 to 10 minutes. Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, melt the unsalted butter over medium heat and sauté the sliced Cajun sausage for 5 to 7 minutes until browned and crispy. Remove and set aside.
  3. In the same skillet, sauté the diced onion and bell pepper for 3 to 4 minutes until the onion is translucent. Add minced garlic and cook for an additional minute.
  4. Pour in the heavy cream, stir, and bring to a gentle simmer. Season with black pepper and salt. If the sauce is too thick, add reserved pasta water to adjust consistency.
  5. Add the cooked pasta and browned Cajun sausage back into the skillet, tossing to coat in the sauce. Stir in grated Parmesan cheese until melted.
  6. Remove from heat, sprinkle with chopped parsley, and serve immediately, garnished with extra Parmesan if desired.
