Ingredients

- 2 cups chopped cabbage
- 3 medium potatoes, diced
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup vegetable broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and sauté until translucent.
- Add diced potatoes and cook for 5 minutes.
- Add chopped cabbage, salt, and pepper.
- Pour in vegetable broth and bring to a simmer.
- Cover and cook for 20 minutes or until potatoes are tender.
- Serve warm.
