- 1 can chickpeas, drained and rinsed
- 1/2 cup buffalo sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 8 small corn tortillas
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup vegan sour cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mash the chickpeas with a fork.
- Add buffalo sauce, garlic powder, and onion powder to the chickpeas and mix well.
- Warm the tortillas slightly to make them pliable.
- Spoon the chickpea mixture onto each tortilla and roll tightly.
- Place the taquitos seam-side down on a baking sheet.
- Bake for 15-20 minutes until crispy.
- Serve with lettuce, tomatoes, and vegan sour cream.
