Buffalo chicken stuffed peppers are a spicy and satisfying dish. They combine the flavors of buffalo chicken with healthy bell peppers.

- 4 bell peppers
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 1/2 cup cream cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix the chicken, buffalo sauce, cream cheese, and half of the cheddar cheese.
- Stuff the mixture into the bell peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes.
- Remove the foil, sprinkle with remaining cheddar cheese, and bake for an additional 10 minutes.
- Garnish with green onions and serve.
Notes
- Use any color bell peppers.
- Adjust the buffalo sauce to your spice preference.
- Top with ranch dressing for added flavor.
