Description

Buffalo cauliflower tacos with avocado crema are a delicious and healthy meal option that combines the bold flavors of buffalo sauce with creamy avocado, creating a satisfying dish perfect for any occasion.

Ingredients

  • Cauliflower florets: 1 medium head (about 4 cups)
  • Buffalo sauce: 1 cup (store-bought or homemade)
  • Corn tortillas: 8 small
  • Avocado: 1 ripe
  • Lime juice: 2 tablespoons (freshly squeezed)
  • Garlic: 1 clove (minced)
  • Fresh cilantro: 1/4 cup (chopped, plus extra for garnish)
  • Shredded cabbage: 1 cup (green or purple, for garnish)
  • Olive oil: 1 tablespoon
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Wash the cauliflower thoroughly, remove the leaves, and cut into bite-sized florets.
  2. In a large mixing bowl, add olive oil, salt, and pepper to the cauliflower florets and toss until well-coated.
  3. If making your own buffalo sauce, combine hot sauce, melted butter, and garlic powder in a bowl and mix until smooth. Pour over the cauliflower and toss to coat.
  4. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Spread the cauliflower in a single layer and bake for 25-30 minutes, flipping halfway through.
  5. In a blender, combine avocado, lime juice, minced garlic, chopped cilantro, and a pinch of salt. Blend until smooth, adding water if necessary for desired consistency.
  6. Warm the corn tortillas in a skillet for about 30 seconds on each side. Assemble the tacos by placing buffalo cauliflower in the center, drizzling with avocado crema, and topping with shredded cabbage and cilantro.

Notes

  • Freshness of cauliflower is key for the best texture and flavor.
  • Adjust the spice level of the buffalo sauce to your preference.
  • Feel free to customize toppings and sauces for variety.
