Ingredients
- Cauliflower florets: 1 medium head (about 4 cups)
- Buffalo sauce: 1 cup (store-bought or homemade)
- Corn tortillas: 8 small
- Avocado: 1 ripe
- Lime juice: 2 tablespoons (freshly squeezed)
- Garlic: 1 clove (minced)
- Fresh cilantro: 1/4 cup (chopped, plus extra for garnish)
- Shredded cabbage: 1 cup (green or purple, for garnish)
- Olive oil: 1 tablespoon
- Salt: to taste
- Pepper: to taste
Instructions
- Wash the cauliflower thoroughly, remove the leaves, and cut into bite-sized florets.
- In a large mixing bowl, add olive oil, salt, and pepper to the cauliflower florets and toss until well-coated.
- If making your own buffalo sauce, combine hot sauce, melted butter, and garlic powder in a bowl and mix until smooth. Pour over the cauliflower and toss to coat.
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Spread the cauliflower in a single layer and bake for 25-30 minutes, flipping halfway through.
- In a blender, combine avocado, lime juice, minced garlic, chopped cilantro, and a pinch of salt. Blend until smooth, adding water if necessary for desired consistency.
- Warm the corn tortillas in a skillet for about 30 seconds on each side. Assemble the tacos by placing buffalo cauliflower in the center, drizzling with avocado crema, and topping with shredded cabbage and cilantro.
