Description
A delicious and fresh pasta dish topped with bruschetta chicken.
Ingredients

- 8 oz penne pasta
- 2 chicken breasts
- 2 cups diced tomatoes
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt to taste
- Pepper to taste
- 1/4 cup balsamic vinegar
Instructions
- Cook the penne pasta according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet.
- Cook chicken for 6-7 minutes on each side until fully cooked.
- Remove chicken and let rest, then dice into pieces.
- In the same skillet, add garlic and cook for 1 minute.
- Add diced tomatoes, basil, and balsamic vinegar. Cook for 2-3 minutes.
- Add cooked pasta and chicken to the skillet, stirring to combine.
- Serve warm, garnished with additional basil if desired.
Notes
- Feel free to add cheese for extra flavor.
- Use whole grain pasta for a healthier option.
- Leftovers can be stored in the fridge for up to 3 days.
