Description

Ingredients

  • 8 oz penne pasta
  • 2 chicken breasts
  • 2 cups diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 1/4 cup balsamic vinegar

Instructions

  1. Cook the penne pasta according to package instructions.
  2. In a skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt and pepper, then add to the skillet.
  4. Cook chicken for 6-7 minutes on each side until fully cooked.
  5. Remove chicken and let rest, then dice into pieces.
  6. In the same skillet, add garlic and cook for 1 minute.
  7. Add diced tomatoes, basil, and balsamic vinegar. Cook for 2-3 minutes.
  8. Add cooked pasta and chicken to the skillet, stirring to combine.
  9. Serve warm, garnished with additional basil if desired.
