Description

A refreshing salad featuring broccoli, cashews, apples, pears, and cranberries.


Ingredients

  • 2 cups fresh broccoli florets
  • 1 cup cashews, roasted
  • 1 apple, diced
  • 1 pear, diced
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine broccoli, cashews, apple, pear, cranberries, and red onion.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
