A refreshing salad featuring broccoli, cashews, apples, pears, and cranberries.
Ingredients

- 2 cups fresh broccoli florets
- 1 cup cashews, roasted
- 1 apple, diced
- 1 pear, diced
- 1/2 cup dried cranberries
- 1/4 cup red onion, finely chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine broccoli, cashews, apple, pear, cranberries, and red onion.
- In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- This salad can be made a day ahead.
- Feel free to add other nuts or seeds.
- For a sweeter dressing, add honey or maple syrup.
