Ingredients

- 2 cups cooked rice
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large pan over medium heat.
- Add mixed vegetables and sauté for 2-3 minutes.
- Push vegetables to the side and pour in beaten eggs. Scramble until cooked.
- Add cooked rice and soy sauce. Stir well to combine.
- Season with salt and pepper.
- Garnish with green onions and serve hot.

- Use day-old rice for best results.
- Customize with your favorite vegetables or proteins.
