- 1 pound ground sausage
- 8 large eggs
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 can black beans, drained
- 8 tortillas, cut into strips
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook the sausage over medium heat until browned.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Layer tortillas, sausage, beans, bell peppers, and onions in a greased baking dish.
- Pour the egg mixture over the layers.
- Sprinkle cheese on top.
- Bake for 30-35 minutes until set and golden.
- Let cool for a few minutes before serving.
Notes
- Feel free to add your favorite toppings like salsa or avocado.
- Can be made ahead and stored in the refrigerator.
- Leftovers can be reheated in the microwave.
