A flavorful Brazilian fish stew with coconut milk and spices.
Ingredients

- 2 lbs white fish fillets
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tomatoes, chopped
- 1 can coconut milk (14 oz)
- 1/4 cup lime juice
- 1/4 cup chopped cilantro
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Sauté until softened.
- Stir in tomatoes and cook for 5 minutes.
- Add fish fillets to the pot.
- Pour in coconut milk and lime juice.
- Season with salt and pepper.
- Simmer for 20 minutes until fish is cooked through.
- Remove from heat and stir in cilantro.
Notes
- Serve with rice for a complete meal.
- Adjust seasoning to your taste.
