Description
A delicious dessert combining blueberries and lemon in a bar form.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup blueberries, fresh or frozen
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/2 cup granulated sugar (for filling)
- 2 large eggs
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, butter, sugar, and salt until crumbly.
- Press the mixture into the bottom of a greased 8×8 inch baking pan.
- Bake for 15 minutes.
- In another bowl, combine blueberries, lemon juice, lemon zest, sugar, eggs, and baking powder.
- Pour the blueberry mixture over the baked crust.
- Bake for an additional 25-30 minutes until set.
- Allow to cool before cutting into bars.
Notes
- Store in the refrigerator for up to 5 days.
- Best served chilled.
