Description

A light and fluffy blueberry chiffon cake perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 3 large eggs, separated
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, beat egg yolks, oil, water, and vanilla.
  4. Combine wet and dry ingredients.
  5. Gently fold in blueberries.
  6. In a separate bowl, whip egg whites until stiff peaks form.
  7. Fold egg whites into the batter carefully.
  8. Pour batter into an ungreased tube pan.
  9. Bake for 40-45 minutes until a toothpick comes out clean.
  10. Cool upside down for 1 hour before removing from the pan.

Notes

  • Use fresh blueberries for best results.
  • Make sure eggs are at room temperature.
  • Do not grease the pan to allow the cake to rise properly.
