A delicious and healthy blueberry banana bread made without any animal products and gluten.
Ingredients

- 2 ripe bananas
- 1 cup blueberries
- 1 cup almond flour
- 1/2 cup gluten-free oats
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mash the bananas until smooth.
- Add maple syrup, melted coconut oil, and vanilla extract to the bananas. Mix well.
- In another bowl, combine almond flour, gluten-free oats, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined.
- Fold in the blueberries gently.
- Pour the batter into a greased loaf pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- Use fresh or frozen blueberries.
- Adjust sweetness to your preference.
