Description

A delicious and healthy blueberry banana bread made without any animal products and gluten.


Ingredients

  • 2 ripe bananas
  • 1 cup blueberries
  • 1 cup almond flour
  • 1/2 cup gluten-free oats
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mash the bananas until smooth.
  3. Add maple syrup, melted coconut oil, and vanilla extract to the bananas. Mix well.
  4. In another bowl, combine almond flour, gluten-free oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Stir until just combined.
  6. Fold in the blueberries gently.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let it cool before slicing.
