Description

A rich and moist cake made with blackberries and cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter
  • 1 cup milk
  • 1 cup fresh blackberries
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 4 cups powdered sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs and vanilla extract, mixing well.
  5. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  6. Gradually add dry ingredients to the wet mixture, alternating with milk.
  7. Gently fold in blackberries.
  8. Pour batter into prepared pans and bake for 25-30 minutes.
  9. Allow cakes to cool completely.
  10. For frosting, beat cream cheese and heavy cream until smooth. Gradually add powdered sugar.
  11. Frost the cooled cakes and assemble them.
