Description
A delicious dessert combining blackberries and pistachios in cheesecake bars.
Ingredients

- 1 cup crushed graham crackers
- 1/2 cup melted butter
- 2 cups cream cheese
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
- 1/2 cup chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C).
- Mix crushed graham crackers and melted butter in a bowl.
- Press the mixture into the bottom of a baking pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- Gently fold in blackberries and pistachios.
- Pour the cheesecake mixture over the crust.
- Bake for 30-35 minutes or until set.
- Let cool before cutting into bars.
Notes
- Store in the refrigerator for up to 5 days.
- Can be topped with additional blackberries before serving.
