Ingredients

  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups fresh blackberries
  • 1/4 cup blackberry jam

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat cream cheese until smooth.
  5. Add 1 cup sugar and vanilla extract; mix well.
  6. Beat in eggs one at a time, mixing just until combined.
  7. Fold in blackberries gently.
  8. Pour the cream cheese mixture over the crust in the pan.
  9. Bake for 55-60 minutes until the center is set.
  10. Remove from the oven and let cool.
  11. Spread blackberry jam on top for finishing.
  12. Chill in the refrigerator for at least 4 hours before serving.
