Description

A delightful cake featuring a unique blend of blackberries and tart apples, perfect for summer.

Ingredients

  • Fresh blackberries: 1 cup (about 150 grams)
  • Tart apples: 2 medium (such as Granny Smith), peeled, cored, and diced
  • All-purpose flour: 1 ½ cups (190 grams)
  • Granulated sugar: 1 cup (200 grams)
  • Unsalted butter: ½ cup (115 grams), softened
  • Eggs: 2 large
  • Baking powder: 2 teaspoons
  • Vanilla extract: 1 teaspoon
  • Salt: ¼ teaspoon
  • Powdered sugar: for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  6. Fold in the diced apples and blackberries gently.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use tart apples like Granny Smith for the best flavor.
  • Store leftovers in an airtight container at room temperature for up to three days.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Consider adding spices like cinnamon or nutmeg for extra flavor.
