Description

Ingredients

  • 1 cup buttermilk

  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup marshmallow fluff
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, oil, eggs, vanilla, and food coloring.
  4. Mix wet and dry ingredients until just combined.
  5. Pour batter into cupcake liners, filling each about two-thirds full.
  6. Bake for 20-22 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely.
  8. In a bowl, beat butter and marshmallow fluff together.
  9. Gradually add powdered sugar and vanilla, mixing until fluffy.
  10. Frost cooled cupcakes with marshmallow frosting.
