- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1 cup marshmallow fluff
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, combine buttermilk, oil, eggs, vanilla, and food coloring.
- Mix wet and dry ingredients until just combined.
- Pour batter into cupcake liners, filling each about two-thirds full.
- Bake for 20-22 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely.
- In a bowl, beat butter and marshmallow fluff together.
- Gradually add powdered sugar and vanilla, mixing until fluffy.
- Frost cooled cupcakes with marshmallow frosting.
Notes
- Store cupcakes in an airtight container.
- Use gel food coloring for better results.
- Feel free to add chocolate chips to the batter.
