Description

Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 pound sausage, sliced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the sausage and cook until browned.
  3. Remove the sausage and set aside.
  4. Add onion, bell pepper, and garlic to the skillet.
  5. Cook until vegetables are soft.
  6. Add rice and stir for 1 minute.
  7. Pour in chicken broth and bring to a boil.
  8. Reduce heat, cover, and simmer for 15 minutes.
  9. Add black beans and sausage back to the skillet.
  10. Stir and heat through for 5 minutes.
