Ingredients

- 1 cup black beans, drained and rinsed
- 1 pound sausage, sliced
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat.
- Add the sausage and cook until browned.
- Remove the sausage and set aside.
- Add onion, bell pepper, and garlic to the skillet.
- Cook until vegetables are soft.
- Add rice and stir for 1 minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add black beans and sausage back to the skillet.
- Stir and heat through for 5 minutes.
