Ingredients

- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Stir in garlic and cook for 1 minute.
- Add lentils, vegetable broth, cumin, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Puree soup for a smoother texture, if desired.
- Serve hot.
