- 10 corn tortillas
- 2 cups shredded cheese
- 1 can enchilada sauce
- 1/2 cup chopped onions
- 1/2 cup sour cream
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F.
- Heat olive oil in a pan and sauté onions until soft.
- Warm the corn tortillas in a microwave or on a skillet.
- Fill each tortilla with cheese and a spoonful of sautéed onions.
- Roll the tortillas and place them in a baking dish.
- Pour enchilada sauce over the rolled tortillas.
- Top with remaining cheese.
- Bake for 20 minutes or until cheese is bubbly.
- Serve with sour cream on the side.
Notes
- For spicier enchiladas, add jalapeños.
- Use a mix of cheeses for added flavor.
