Description

A delicious berry velvet layer cake with creamy frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 3 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour three 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add buttermilk, oil, eggs, and vanilla. Mix until smooth.
  5. Divide batter evenly among pans.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cakes cool for 10 minutes, then remove from pans.
  8. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  9. Layer cakes with whipped cream and mixed berries in between.
  10. Frost the top and sides of the cake with remaining whipped cream.
