Ingredients
Scale
- 2 medium beets, roasted
- 1 cup arugula
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- Roast beets until tender, about 45 minutes.
- Let beets cool, then peel and slice.
- In a large bowl, combine arugula, sliced beets, feta, and walnuts.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle dressing over salad and toss gently.
- Serve immediately.

- You can add other vegetables like carrots or cucumbers.
