Instructions

  1. Prepare all ingredients by slicing the beef, cleaning and slicing the mushrooms, and chopping the onion and garlic.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and cook the beef strips in batches until browned, about 2-3 minutes. Remove and set aside.
  3. In the same skillet, add the remaining olive oil and butter, then sauté the onion until translucent. Add garlic and mushrooms, cooking until tender and browned.
  4. Sprinkle flour over the mushroom mixture, stir, and gradually add beef broth while stirring. Simmer for about 5 minutes to thicken.
  5. Reduce heat, return the beef to the skillet, and stir in sour cream and Dijon mustard. Season with salt and pepper, and heat gently without boiling.
  6. Serve over cooked egg noodles and garnish with fresh parsley.
