Instructions
- Prepare all ingredients by slicing the beef, cleaning and slicing the mushrooms, and chopping the onion and garlic.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and cook the beef strips in batches until browned, about 2-3 minutes. Remove and set aside.
- In the same skillet, add the remaining olive oil and butter, then sauté the onion until translucent. Add garlic and mushrooms, cooking until tender and browned.
- Sprinkle flour over the mushroom mixture, stir, and gradually add beef broth while stirring. Simmer for about 5 minutes to thicken.
- Reduce heat, return the beef to the skillet, and stir in sour cream and Dijon mustard. Season with salt and pepper, and heat gently without boiling.
