Description

Beef Chile Colorado is a flavorful and spicy dish made with tender beef and a rich red chili sauce.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 dried New Mexico chiles
  • 2 cups beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Soak the dried chiles in hot water for 15 minutes until softened.
  2. Blend the chiles with beef broth until smooth.
  3. In a large pot, brown the beef cubes over medium heat.
  4. Add onions and garlic to the pot and sauté until tender.
  5. Pour the chile sauce over the beef and stir in cumin and oregano.
  6. Simmer for 1.5 to 2 hours until the beef is tender.
  7. Season with salt and pepper to taste.
