Ingredients

- 2 lbs beef stew meat, cut into cubes
- 4 cups beef broth
- 1 cup egg noodles
- 2 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon black pepper
- Salt to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Add onions and garlic, sauté until soft.
- Pour in beef broth and add carrots, potatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add egg noodles and cook for an additional 10 minutes.
- Serve hot and enjoy.

- Adjust seasoning according to your taste.
- You can use other vegetables like peas or corn.
