Description
BBQ chicken quesadillas are a tasty and easy-to-make meal. They combine shredded chicken, BBQ sauce, and cheese, all grilled between tortillas.

- 2 cups shredded cooked chicken
- 1 cup BBQ sauce
- 2 cups shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1/2 cup diced onions
Instructions
- In a bowl, mix the shredded chicken with BBQ sauce.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Spread half of the chicken mixture on the tortilla.
- Add half of the cheese and some diced onions.
- Top with another tortilla and cook until golden brown.
- Flip and cook the other side until golden and cheese melts.
- Remove from skillet and cut into wedges.
Notes
- Customize with your favorite toppings.
- Serve with sour cream or guacamole.
- Store leftovers in the fridge for up to 3 days.
