Description

BBQ chicken quesadillas are a tasty and easy-to-make meal. They combine shredded chicken, BBQ sauce, and cheese, all grilled between tortillas.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1/2 cup diced onions

Instructions

  1. In a bowl, mix the shredded chicken with BBQ sauce.
  2. Heat olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet.
  4. Spread half of the chicken mixture on the tortilla.
  5. Add half of the cheese and some diced onions.
  6. Top with another tortilla and cook until golden brown.
  7. Flip and cook the other side until golden and cheese melts.
  8. Remove from skillet and cut into wedges.

Notes

  • Customize with your favorite toppings.
  • Serve with sour cream or guacamole.
