Description

A delicious BBQ chicken quesadilla filled with cheese and grilled chicken.


Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup chopped green onions

Instructions

  1. Mix shredded chicken with BBQ sauce in a bowl.
  2. Heat olive oil in a pan over medium heat.
  3. Place one tortilla in the pan.
  4. Add half of the chicken mixture and half of the cheese on one half of the tortilla.
  5. Fold the tortilla over and cook until golden brown.
  6. Flip and cook the other side until cheese melts.
  7. Remove from the pan and cut into wedges.
  8. Repeat with remaining tortillas and filling.

Notes

  • Serve with sour cream or guacamole.
  • Customize with additional vegetables if desired.
