- 3 ripe bananas
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda

- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the bananas in a bowl.
- Cream the butter and sugar together in a separate bowl.
- Add eggs and vanilla to the butter mixture, mixing well.
- Combine the banana mixture with the butter mixture.
- In another bowl, mix flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients.
- Pour the batter into a greased cake pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool before frosting.
- For the frosting, beat cream cheese, powdered sugar, and lemon juice until smooth.
- Spread the frosting over the cooled banana bread cake.
Notes
- Use ripe bananas for better flavor.
- Store leftovers in the refrigerator.
- Can be made ahead of time and frozen.
