Delicious baked vegetable rolls filled with fresh vegetables.
Ingredients
Scale
- 1 cup of mixed vegetables (carrots, bell peppers, zucchini)
- 1 cup of cream cheese
- 1 package of spring roll wrappers
- 1 tablespoon of olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the mixed vegetables into small pieces.
- In a bowl, mix the chopped vegetables with cream cheese, olive oil, salt, and pepper.
- Take a spring roll wrapper and place a spoonful of the vegetable mixture in the center.
- Fold the sides of the wrapper over the filling and roll it tightly.
- Place the rolls on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Serve hot.
Notes
- Experiment with different vegetables.
- Serve with a dipping sauce of your choice.
- Make sure to seal the rolls well to prevent filling from leaking.
