Description

Crispy baked potato skins filled with cheese and bacon.


Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Bake the potatoes for 45 minutes or until tender.
  4. Remove the potatoes and let them cool slightly.
  5. Cut the potatoes in half lengthwise and scoop out most of the flesh, leaving a thin layer.
  6. Brush the insides with olive oil, and sprinkle with salt and pepper.
  7. Bake the skins again for 10 minutes until crispy.
  8. Fill each skin with cheese and bacon, then return to the oven for 5 minutes until the cheese melts.
  9. Top with sour cream and green onions before serving.

Notes

  • Store leftover skins in an airtight container in the fridge.
