Description
Crispy baked potato skins filled with cheese and bacon.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 tablespoons chopped green onions
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork.
- Bake the potatoes for 45 minutes or until tender.
- Remove the potatoes and let them cool slightly.
- Cut the potatoes in half lengthwise and scoop out most of the flesh, leaving a thin layer.
- Brush the insides with olive oil, and sprinkle with salt and pepper.
- Bake the skins again for 10 minutes until crispy.
- Fill each skin with cheese and bacon, then return to the oven for 5 minutes until the cheese melts.
- Top with sour cream and green onions before serving.
Notes
- Store leftover skins in an airtight container in the fridge.
- You can customize toppings as desired.
