- 2 lobster tails
- 4 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- Salt, to taste
- Pepper, to taste
- 2 cups potatoes, peeled and diced
- 1/2 cup milk
- 2 tablespoons butter for mashed potatoes
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the lobster tails by cutting the top shell with kitchen scissors.
- In a small saucepan, melt 4 tablespoons of butter over medium heat.
- Add minced garlic and sauté for 1-2 minutes.
- Stir in parsley, lemon juice, salt, and pepper.
- Brush the garlic herb butter over the lobster meat.
- Place lobster tails on a baking sheet and bake for 12-15 minutes.
- While the lobster is baking, boil the potatoes in salted water until tender.
- Drain the potatoes and mash them with milk and 2 tablespoons of butter.
- Serve lobster tails with mashed potatoes on the side.
