Delicious baked blueberry donuts that are vegan and gluten-free.
Ingredients

- 1 cup almond flour
- 1 cup gluten-free all-purpose flour
- 1/2 cup maple syrup
- 1/2 cup almond milk
- 1/4 cup coconut oil, melted
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix almond flour, gluten-free flour, baking powder, and salt.
- In another bowl, combine maple syrup, almond milk, coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Gently fold in the blueberries.
- Grease a donut pan and fill each mold with the batter.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let the donuts cool before removing them from the pan.
Notes
- Store leftover donuts in an airtight container.
- You can substitute blueberries with other berries if desired.
