Description

Baked Apple & Date Honey Pudding with Toffee is a warm dessert that combines the sweetness of apples and dates with a rich toffee sauce.


Ingredients

  • 4 medium apples, peeled, cored, and chopped
  • 1 cup pitted dates, chopped
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Toffee sauce for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. In a medium bowl, combine the chopped apples with a sprinkle of cinnamon and set aside.
  3. In a large mixing bowl, whisk together the melted butter, brown sugar, and eggs until well combined. Add the milk and vanilla extract, mixing until smooth.
  4. In another bowl, sift together the flour, baking powder, ground cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Gently fold the chopped apples and dates into the batter until evenly distributed.
  6. Pour the batter into the prepared baking dish, smoothing the top. Bake for 35-40 minutes, or until golden brown and a toothpick comes out clean.
  7. While the pudding is baking, prepare your toffee sauce if making it from scratch. Alternatively, heat store-bought toffee sauce until warm.
  8. Once the pudding is done, let it cool for a few minutes. Cut into squares and serve warm, drizzled with toffee sauce.
