Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup coconut milk
- 1/4 cup crushed pineapple
- 1/4 cup dark rum
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar.
- Add eggs one at a time, mixing well after each.
- Stir in the coconut milk, crushed pineapple, rum, and vanilla.
- In another bowl, mix flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture.
- Fill cupcake liners with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before frosting.
Notes
- Store cupcakes in an airtight container.
- Frost with cream cheese icing for extra flavor.
- Can substitute rum with coconut extract for a non-alcoholic version.
