Ingredients

- 1 ripe avocado – about 200 grams, mashed
- 1 cup granulated sugar – 200 grams
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder – 50 grams
- 1/2 cup all-purpose flour – 65 grams
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips – 90 grams
For the chocolate glaze, you will need:
- 1/2 cup heavy cream – 120 ml
- 1 cup semi-sweet chocolate chips – 180 grams
- Sea salt – for sprinkling on top
Instructions
- Prepare the avocado by cutting it in half, removing the pit, and mashing it until smooth.
- Sift together the cocoa powder, flour, baking powder, and salt in a separate bowl.
- In the bowl with the mashed avocado, mix in the sugar, eggs, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined, then fold in the chocolate chips.
- Pour the batter into a prepared baking pan and bake in a preheated oven for 20-25 minutes. Check for doneness with a toothpick.
Notes
- Choose ripe avocados for the best texture.
- Store leftovers in an airtight container for up to three days at room temperature or refrigerate for up to a week.
- For gluten-free, substitute all-purpose flour with a gluten-free blend or almond flour.
- For vegan, replace eggs with flax eggs and ensure chocolate chips are dairy-free.
