Description

Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter (for caramel)
  • 1 cup brown sugar (for caramel)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (for caramel)
  • Pinch of salt (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 10-inch oven-safe skillet or a round cake pan with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon (if using). Set aside.
  3. In a large bowl, mix the melted butter and brown sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and milk until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Gently fold in the diced apples and chopped dates.
  5. Pour the batter into the prepared skillet, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. In a saucepan over medium heat, melt the butter for the caramel. Stir in the brown sugar and cook for about 2-3 minutes until the mixture is smooth. Gradually whisk in the heavy cream, vanilla extract, and a pinch of salt. Bring to a gentle simmer and cook for an additional 2-3 minutes until slightly thickened. Remove from heat and set aside.
  7. Once the cake is done baking, remove it from the oven and let it cool in the skillet for about 10 minutes. Carefully invert the cake onto a serving plate. Drizzle the warm butter caramel over the top.
  8. Serve warm, either on its own or with a scoop of vanilla ice cream.

Notes

  • For added flavor, sprinkle chopped nuts on top before baking.
  • For a more intense caramel flavor, let the caramel simmer a little longer.
