Ingredients
Scale
- 2 medium apples, peeled, cored, and diced
- 1 cup pitted dates, chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 teaspoon ground cinnamon (optional)
- 1/2 cup unsalted butter (for caramel)
- 1 cup brown sugar (for caramel)
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract (for caramel)
- Pinch of salt (for caramel)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 10-inch oven-safe skillet or a round cake pan with butter or non-stick spray.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon (if using). Set aside.
- In a large bowl, mix the melted butter and brown sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and milk until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Gently fold in the diced apples and chopped dates.
- Pour the batter into the prepared skillet, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- In a saucepan over medium heat, melt the butter for the caramel. Stir in the brown sugar and cook for about 2-3 minutes until the mixture is smooth. Gradually whisk in the heavy cream, vanilla extract, and a pinch of salt. Bring to a gentle simmer and cook for an additional 2-3 minutes until slightly thickened. Remove from heat and set aside.
- Once the cake is done baking, remove it from the oven and let it cool in the skillet for about 10 minutes. Carefully invert the cake onto a serving plate. Drizzle the warm butter caramel over the top.
- Serve warm, either on its own or with a scoop of vanilla ice cream.
Notes
- For added flavor, sprinkle chopped nuts on top before baking.
- For a more intense caramel flavor, let the caramel simmer a little longer.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
