Description

Delicious apple date gingerbread pudding served with a rich golden sauce.


Ingredients

  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup chopped dates (pitted)
  • 1 cup peeled and diced apples (about 1 medium apple)
  • 1/2 cup milk
  • 1/2 cup unsalted butter (for sauce)
  • 1 cup brown sugar (for sauce)
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt (for sauce)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium bowl, whisk together flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt. Set aside.
  3. In a large mixing bowl, beat softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time. Then add applesauce and mix until incorporated.
  5. Gradually add dry ingredients to wet mixture, alternating with milk. Mix until just combined.
  6. Fold in chopped dates and diced apples until evenly distributed.
  7. Pour batter into prepared baking dish and smooth the top. Bake for 30-35 minutes, until a toothpick comes out clean.
  8. While baking, melt butter for golden sauce in a saucepan over medium heat. Stir in brown sugar and cook until bubbly.
  9. Whisk in heavy cream, vanilla extract, and salt. Simmer for 3-5 minutes until slightly thickened. Remove from heat.
  10. Once pudding is baked, let cool for a few minutes before slicing. Serve warm, drizzled with golden sauce.

  • Consider adding chopped nuts like walnuts or pecans for extra flavor.
