Delicious apple date gingerbread pudding served with a rich golden sauce.

- 1 cup brown sugar, packed
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 1/2 cup chopped dates (pitted)
- 1 cup peeled and diced apples (about 1 medium apple)
- 1/2 cup milk
- 1/2 cup unsalted butter (for sauce)
- 1 cup brown sugar (for sauce)
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt (for sauce)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a medium bowl, whisk together flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt. Set aside.
- In a large mixing bowl, beat softened butter and brown sugar until light and fluffy, about 3-4 minutes.
- Beat in eggs one at a time. Then add applesauce and mix until incorporated.
- Gradually add dry ingredients to wet mixture, alternating with milk. Mix until just combined.
- Fold in chopped dates and diced apples until evenly distributed.
- Pour batter into prepared baking dish and smooth the top. Bake for 30-35 minutes, until a toothpick comes out clean.
- While baking, melt butter for golden sauce in a saucepan over medium heat. Stir in brown sugar and cook until bubbly.
- Whisk in heavy cream, vanilla extract, and salt. Simmer for 3-5 minutes until slightly thickened. Remove from heat.
- Once pudding is baked, let cool for a few minutes before slicing. Serve warm, drizzled with golden sauce.
Notes
- Consider adding chopped nuts like walnuts or pecans for extra flavor.
- This pudding can be made a day in advance and reheated.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
