Description

A delicious Apple Date Brown Sugar Sponge topped with a rich butter sauce.

Ingredients

Scale
  • 2 medium apples, peeled, cored, and diced (about 2 cups)
  • 1 cup pitted dates, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • For the Butter Sauce:
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract until combined.
  5. Gradually add the flour mixture to the butter mixture, alternating with the milk. Start and end with the flour mixture, mixing until just combined.
  6. Gently fold in the diced apples and chopped dates until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the butter sauce. In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and heavy cream, bringing the mixture to a gentle boil. Cook for about 2-3 minutes, stirring constantly until the sauce thickens slightly. Remove from heat and stir in the vanilla extract.
  9. Once the cake is baked, allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice the cake and serve warm or at room temperature, drizzled with the butter sauce.
  10. This Apple Date Brown Sugar Sponge is perfect for dessert or as a sweet treat with coffee or tea.

Notes

  • For added flavor, consider adding a teaspoon of cinnamon or nutmeg to the dry ingredients.
  • Serve with a scoop of vanilla ice cream for an extra indulgent dessert.
  • If you prefer a more caramelized top, you can broil the cake for a minute or two after baking.
