Description
A delicious Apple Date Brown Sugar Sponge topped with a rich butter sauce.
Ingredients
Scale
- 2 medium apples, peeled, cored, and diced (about 2 cups)
- 1 cup pitted dates, chopped
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- For the Butter Sauce:
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter and brown sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract until combined.
- Gradually add the flour mixture to the butter mixture, alternating with the milk. Start and end with the flour mixture, mixing until just combined.
- Gently fold in the diced apples and chopped dates until evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the butter sauce. In a small saucepan over medium heat, melt the butter. Stir in the brown sugar and heavy cream, bringing the mixture to a gentle boil. Cook for about 2-3 minutes, stirring constantly until the sauce thickens slightly. Remove from heat and stir in the vanilla extract.
- Once the cake is baked, allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice the cake and serve warm or at room temperature, drizzled with the butter sauce.
- This Apple Date Brown Sugar Sponge is perfect for dessert or as a sweet treat with coffee or tea.
Notes
- For added flavor, consider adding a teaspoon of cinnamon or nutmeg to the dry ingredients.
- Serve with a scoop of vanilla ice cream for an extra indulgent dessert.
- If you prefer a more caramelized top, you can broil the cake for a minute or two after baking.
