Description
A moist and flavorful cake featuring brown butter, apples, and dates, topped with warm maple syrup.
Ingredients
Scale
- 1 cup unsalted butter (226 grams)
- 1 cup brown sugar (220 grams)
- 1/2 cup granulated sugar (100 grams)
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour (240 grams)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups apples, peeled and diced (about 2 medium apples)
- 1 cup dates, pitted and chopped (about 8–10 dates)
- 1/2 cup buttermilk (120 ml)
- 1/2 cup maple syrup (120 ml)
- 1/4 cup unsalted butter (56 grams)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium saucepan, melt the 1 cup of unsalted butter over medium heat. Cook until golden brown and nutty, about 5-7 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, combine brown sugar and granulated sugar. Add the browned butter and mix well.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined.
- Gently fold in the diced apples and chopped dates until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes, or until a toothpick comes out clean.
- While the cake bakes, prepare the warm syrup. In a small saucepan, combine maple syrup and 1/4 cup of unsalted butter. Heat over low until melted and warm. Stir to combine.
- Once the cake is done, cool in the pan for about 10 minutes, then transfer to a wire rack. Serve warm, drizzled with the warm syrup.
Notes
- Consider adding a teaspoon of cinnamon or nutmeg for extra flavor.
- This cake can be stored at room temperature in an airtight container for up to 3 days.
- Serve with vanilla ice cream or whipped cream for an extra treat.
